Chickpea Noodle Soup

Chickpea noodle soup is a delicious healthy vegan alternative to chicken noodle soup!

Ingredients: 

4-5 medium onions
Head of celery 
3-4 large carrots 
2 tbsp garlic
Salt 
Pepper 
1 tbsp thyme 
5 vegetable bullion cubes 
9-10 cups water 
2 cans of chickpeas 
3 cups wheat noodles 
1/2 cup fresh parsley 

Step 1: Cut up onions, celery, and carrot and put them in a pot with garlic and 1-2 cups of water. Put on stove and bring to a boil, stirring occasionally.

Step 2: Once at a boil stir in thyme, preferred about of salt and pepper, and vegetable bullion cubes. One cubes have been dissolved add the remaining 8-9 cups of water and again bring to a boil. 

Step 3: once at a boil add chickpeas and wheat noodles. Cook for about 8 minutes or until noodles have been cooked. Take off heat and add in the parsley. 

Step 4:  Enjoy! Best served with warm bread rolls.
