Red Lentil Soup
If you’re looking for a delicious take on vegetable soup, this is it. Hearty, filling, healthy, vegan, and comforting. So delicious!
Ingredients:
4-5 medium onions
4-5 large carrots
1 head of celery
2 tsp turmeric
1.5 tsp paprika
1 tsp cinnamon
4 vegetable bullion cubes
3-4 cups water
2 cans tomato puré (500 g each)
1 can chickpeas
1 1/2 cups dry red split lentils
1/4 fresh parsley
1/4 fresh cilantro
salt and pepper to taste
Optional: Pinch of cayenne pepper
Step 1: Chop up 4-5 medium onions, 4-5 large carrots, and head of celery. Put them in a pot with 1 cup of water, cover and stir occasionally until boiling. While waiting for it to boil, chop up 1/4 cup parsley and 1/4 cilantro.
Step 2: Stir in 2 tsp turmeric, 1.5 tsp paprika, 1 tsp cinnamon, 4 vegetable bullion cubes, salt and pepper to taste, and remaining 2-3 cups of water and bring to a boil. If desired, add a pinch of cayenne pepper for a little spice.
Step 3: Once boiling, add in 2 cans of tomato puré, can of chickpeas, and 1 1/2 cups of dry red split lentils. Once this new mixture is boiling, lower to a simmer and stir occasionally for 20-30 minutes
Step 4: Stir in 1/4 chopped parsley and 1/4 cup chopped cilantro.
Step 5: Enjoy!
