Ramen with Veggies
Sometimes I just want something that fast and easy and cheap. And that’s when I make this vegetable packed ramen. It’s actually pretty good and you can use up whatever veggies you have left over from other meals. Here’s what I do…
Ingredients:
- Whatever veggies you have around your house! I am using onions, mushrooms, zucchini and bell peppers
- Minced Garlic
- Crushed tomatoes (two boxes for a full pot)
- 6 packs of vegetable ramen
- Your favorite seasoning, I am using curry powder
Step 1: Add your veggies and a big spoon full of garlic. I usually use onions, mushrooms, zucchini and bell peppers… but if you have other things laying around, add them in!
Step 2: Add some water, don’t cover the vegetables but add a couple cups of water. Then cover the pot and turn it on high. The vegetables will steam/boil. This will take a few minutes
Step 3: Add in a heaping spoonful of your favorite seasoning. I usually go for some type of curry powder
Step 4: Add in crushed tomatoes. I usually use 2x 500g boxes when I’m making a full pot.
Step 5: Add in some vegetable ramen. I usually use 6 packs to make a full pot. I also usually add in the seasoning packets that come with the ramen…. though that can sometimes make it quite salty. If you need to add a little water to cover these, do it now. More for a soupy ramen, less for a noodley ramen.
Step 6: Boil it for 3-5 mins, whatever the package says.
Step 7: Enjoy your super easy meal!
