Single-serve Chips and Guacamole
These are my favorite healthy alternatives to sitting down with a bag of chips. I always opt for the whole wheat tortillas when the store has them. The rest is just fresh veg… Feels naughty but it’s quite healthy and super delicious!
Ingredients:
4 medium-sized tortillas
2 avocadoes
4 cherry tomatoes
1/4 of a red onion
1/4 of a jalepeño pepper
2 tsp cumin
1 pinch of salt
1 pinch of pepper
Step 1: Preheat oven to 350°F (175°C), line a baking sheet with parchment paper, and start cutting up the tortillas into 8 pieces each.
Step 2: Layout chips onto the lined pan. Bake the chips for 15-17 minutes. While the chips are baking, you can make the guacamole.
Step 3: Cut up the 2 avocados and out them in a bowl. Once in the bowl, mash them up with a fork until smooth.
Step 4: Dice the tomatoes, jalapeno, and red onion. Once cut, mix them into the avocado mash.
Step 5: Mix the cumin, salt, and pepper into the guacamole mixture. Once chips are properly baked and crisp, take them out of the oven and enjoy!
